Creamy Bacon and Potato Bake is a comforting and hearty dish that brings together the rich flavors of crispy bacon, tender potatoes, and a creamy sauce. It's perfect for a family dinner or a special occasion, and it's simple enough to prepare for a weeknight meal. This recipe promises a delightful blend of savory ingredients that will leave everyone asking for seconds.

Ingredients:

2 tsp olive oil
9g
4 potatoes
800g
4 bacon strips
100g
1 onion
160g
2 garlic cloves
6g
6 eggs
300g
1/3 cup light sour cream
72g
2 tbsp tomato puree
30g
1/2 cup grated parmesan cheese
40g

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Potatoes:
Peel the 4 potatoes and cut them into thin slices. You want them to be about 1/4 inch thick.
3. Cook Bacon and Onion:
- Heat 2 tsp of olive oil in a large skillet over medium heat.
- Cut the bacon strips into small pieces.
- Chop the onion finely.
- Add the bacon to the skillet and cook until it starts to crisp, about 5-7 minutes.
- Add the chopped onion to the skillet and cook until it becomes translucent, about 5 minutes.
- Mince the 2 garlic cloves and add them in the last minute of cooking, stirring to combine.
4. Layer Potatoes:
Lightly grease a baking dish (around 9x13 inches). Arrange half of the sliced potatoes in the dish.
5. Add Bacon Mixture:
Spread the bacon and onion mixture evenly over the potatoes.
6. Layer Remaining Potatoes:
Arrange the remaining sliced potatoes on top of the bacon mixture.
7. Prepare Egg Mixture:
- In a mixing bowl, crack the 6 eggs.
- Add 1/3 cup of light sour cream and 2 tbsp of tomato puree.
- Whisk together until well combined.

8. Pour Egg Mixture:
Pour the egg mixture evenly over the layered potatoes and bacon.
9. Add Parmesan Cheese:
Sprinkle 1/2 cup of grated parmesan cheese evenly over the top.
10. Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
11. Uncover and Brown:
After 40 minutes, remove the foil and continue to bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
12. Cool and Serve:
Remove the bake from the oven and let it cool for 5-10 minutes before serving.

Tips:

- Ensure you slice the potatoes uniformly to ensure even cooking.

- Opt for a waxy potato variety like Yukon Gold for a creamier texture.

- Cook the bacon until it's just crispy to add a nice textural contrast to the dish.

- For a deeper flavor, consider sautéing the onion and garlic in the bacon fat instead of discarding it.

- Let the bake rest for a few minutes after removing it from the oven to allow the flavors to meld together and make serving easier.

This Creamy Bacon and Potato Bake is a delightful combination of simple ingredients that come together to create a dish full of comfort and flavor. Whether you're making it for a family dinner or a potluck, this bake is sure to impress. The crispy bacon, tender potatoes, and creamy, cheesy sauce create a meal that is both satisfying and delicious.
