Instructions:

1. Prepare the Ingredients:

- Grate the lemon peel to get about 1 teaspoon of zest.
- Juice the lemons to get about 1/4 cup of lemon juice.
- Peel and finely chop the garlic cloves.
- If the almonds are not already toasted, spread them on a baking sheet and toast in a 350°F (175°C) oven for about 8-10 minutes, until golden and fragrant. Let cool slightly, then roughly chop.
2. Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the gluten-free pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta cooking water, then drain the pasta.
3. Prepare the Sauce:
- In a large skillet over medium heat, add the olive oil and butter.
- Once the butter has melted, add the chopped garlic and sauté until fragrant, about 1 minute.
- Add the lemon zest and sauté for another 30 seconds.
4. Combine Ingredients:
- Add the reserved pasta cooking water to the skillet and bring to a simmer.
- Add the spinach and cook until it wilts, about 2-3 minutes.
- Add the drained pasta to the skillet and toss to coat in the sauce.
- Pour in the lemon juice and continue to toss until everything is well combined.
5. Finish the Dish:
- Tear the burrata cheese into bite-sized pieces and gently fold it into the pasta.
- Sprinkle the chopped toasted almonds over the top.
- Season with salt and pepper to taste.
6. Serve:
- Transfer the pasta mixture to serving bowls.
