Instructions:

1. Preheat the Oven: Preheat your oven to 400°F (200°C).
2. Cook the Fish and Shrimp:
- In a large saucepan, combine the salmon, white fish, shrimp, milk, and bay leaf.
- Place the saucepan over medium heat and bring to a gentle simmer. Let it simmer for about 5-7 minutes, or until the fish is just cooked through.
- Remove the fish and shrimp from the milk using a slotted spoon and set them aside. Strain the cooking liquid (milk) and keep it for making the sauce.
3. Prepare the Vegetables:
- In a large skillet, melt 2 tablespoons of the butter over medium heat.
- Add the sliced leeks and diced carrot to the skillet and cook until they are softened, about 5-7 minutes.
- Remove from heat and set aside.
4. Make the Creamy Sauce:
- In a medium saucepan, melt the remaining butter over medium heat.
- Sprinkle in the flour and cook, stirring constantly, for about 1-2 minutes to form a roux.
- Gradually add the reserved cooking milk, stirring continuously until the sauce thickens and comes to a boil.
- Reduce the heat and stir in the heavy cream. Continue to cook for another 2 minutes.
- Add the cooked leeks, carrots, peas, chives, and dill to the sauce. Mix well to combine.
5. Combine and Assemble:
- Gently fold the cooked fish and shrimp into the creamy vegetable mixture.
- Transfer the mixture to an ovenproof pie dish, spreading it out evenly.
6. Prepare the Puff Pastry Topping:
- Roll out the puff pastry if necessary to cover the top of your pie dish.
- Place the puff pastry over the pie dish, trimming any excess. Press the edges to seal.
- Brush the top of the pastry with the beaten egg.
7. Bake the Pie:
- Place the assembled pie in the preheated oven.
- Bake for 20-25 minutes, or until the pastry is golden brown and puffed.
8. Serve:
- Remove from the oven and let the pie cool for a few minutes before serving.
