Ingredients:

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Cook the Rice:
Cook 2 cups of white rice as per the package instructions. Once cooked, set aside to cool slightly.
3. Prepare the Vegetables:
- Chop the Onion: Finely chop 1 onion.
- Grate or Dice the Zucchini: Depending on preference, you can either grate the zucchini or dice it into small pieces.
4. Sauté the Vegetables:
- Heat 1 tablespoon of butter in a large skillet over medium heat.
- Add the chopped onion and cook until they are soft and translucent, about 5 minutes.
- Add the zucchini to the skillet and cook for another 5 minutes or until they are tender.
5. Mix the Ingredients:
- In a large mixing bowl, combine the cooked rice, sautéed onion and zucchini mixture.
- Add 2 tablespoons of Greek yogurt to the mixture.
- Pour in 1 cup of vegetable broth.
- Crumble 1 cup of feta cheese and add it to the mixture.
- Mix everything thoroughly until well combined.
6. Assemble in a Baking Dish:
- Lightly grease a baking dish with some butter or cooking spray.
- Pour the rice and vegetable mixture into the baking dish, spreading it evenly.
7. Top with Cheddar Cheese:
- Sprinkle 1 cup of shredded cheddar cheese evenly over the top of the rice mixture.
8. Bake:
- Place the baking dish in the preheated oven.
- Bake for 25-30 minutes, or until the top is golden brown and crispy.
9. Cool and Serve:
