Made with wholesome ingredients like turkey bacon, whole-wheat bread, and a variety of vegetables, this recipe ensures a flavorful and balanced start to your day.

Ingredients:

1 short spray cooking spray oil
0.30g
1 cup turkey bacon
80g
1 package frozen spinach
280g
4 slices whole-wheat bread
170g
2 tbsp olive oil
27g
1 cup cheddar cheese
110g
3 onions
44g
1/2 tsp garlic powder
1.55g
1/4 tsp salt
1.50g
1 dash black pepper
1/10g
5 eggs
280g
1 cup nonfat milk
240g

Instructions:

1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly coat a muffin tin with cooking spray oil to prevent sticking.
2. Cook the Turkey Bacon: In a skillet over medium heat, cook the chopped turkey bacon until it is crispy. This should take about 5-7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain any excess grease.
3. Sauté Onions and Spinach: In the same skillet, add the finely chopped onions and sauté until they become soft and translucent, about 3-4 minutes. Add the thawed and drained spinach to the skillet and cook for an additional 2 minutes. Remove from heat and set aside.
4. Prepare the Bread Mixture: In a large mixing bowl, combine the cubed whole-wheat bread and 2 tbsp of olive oil. Toss until the bread is evenly coated. Add the cooked bacon, spinach-onion mixture, shredded cheddar cheese, garlic powder, salt, and black pepper. Mix well to combine.
5. Whisk the Eggs and Milk: In a separate bowl, whisk together the eggs and nonfat milk until fully blended.
6. Combine Mixtures: Pour the egg and milk mixture over the bread mixture. Gently stir until everything is well combined and the bread is soaked with the egg mixture.
7. Fill the Muffin Tin: Evenly spoon the mixture into the prepared muffin tin, filling each cup to the top.
8. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the casseroles are set and a toothpick inserted into the center comes out clean.
9. Cool and Serve: Allow the mini casseroles to cool in the muffin tin for a few minutes before removing them. Serve warm and enjoy!

Tips:

- Thawing Spinach: Be sure to thoroughly thaw and drain the frozen spinach to remove excess moisture. This will prevent your casseroles from becoming soggy.

- Bread Choice: For a different texture or added flavor, you can substitute whole-wheat bread with other types of bread like sourdough or multigrain.

- Cheese Variation: Feel free to mix and match cheddar cheese with other varieties like mozzarella or feta to change up the flavor profile.

- Customization: Add more vegetables such as bell peppers, tomatoes, or mushrooms to make these mini casseroles even more nutritious.

- Serving Suggestions: Pair these mini casseroles with a side of fresh fruit or a simple salad to complete your meal.

Egg and bacon mini casseroles are a versatile and convenient dish that's sure to please everyone at the table. With a quick preparation time and hearty ingredients, these mini casseroles can easily become a staple in your breakfast or brunch repertoire. Enjoy the rich blend of flavors and textures each bite offers!
