Instructions:

1. Preheat the Oven:

- In a pot of salted boiling water, add the diced potatoes and cook until just tender, about 10 minutes. Drain well and set aside.
3. Cook the Bacon:
- In a large skillet, cook the bacon strips over medium heat until crispy, about 5-7 minutes. Remove the bacon and place it on a paper towel-lined plate to drain.
- Once cool, chop the bacon into small pieces.
4. Sauté the Garlic:
- In the same skillet with some of the bacon drippings, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

5. Mix the Filling:
- In a large mixing bowl, whisk together the eggs, milk, grated Parmesan cheese, mustard, salt, and pepper until well combined.
- Add the cooked potatoes, chopped bacon, sautéed garlic, and chopped parsley to the egg mixture. Stir gently to combine.
6. Prepare the Pie:
- Lightly grease a pie dish or a baking dish.
- Pour the egg mixture into the prepared dish, spreading it out evenly.
7. Bake the Pie:
- Place the dish in the preheated oven and bake for about 35-40 minutes, or until the pie is set in the center and lightly golden brown on top.
- To check for doneness, insert a knife or toothpick into the center of the pie; it should come out clean.
8. Cool and Serve:
