Instructions:

1. Prepare the Ingredients:
- Finely chop the onion and red hot chili peppers.
- Finely chop the celery stalk.
- Peel and dice the carrot.
- Drain and rinse the canned lentils.
2. Heat the Olive Oil:
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
3. Sauté the Vegetables:
- Add the chopped onion to the pot and sauté for about 3-4 minutes until it becomes translucent.
- Add the finely chopped chili peppers, celery, and diced carrot. Stir and cook for another 5-7 minutes until the vegetables start to soften.
4. Add Spices:
- Sprinkle 1 teaspoon of ground cumin and 1 teaspoon of dried coriander into the pot. Stir well to combine and cook for about 1 minute, allowing the spices to release their aroma.
5. Add Lentils and Chicken Gravy:
- Add the drained and rinsed lentils to the pot.
- Pour in the 4 cups of chicken gravy. Stir to combine all the ingredients.
6. Simmer the Soup:
- Bring the soup to a boil over medium-high heat, then reduce the heat to low.
- Let the soup simmer for 15-20 minutes, allowing the flavors to meld together. Stir occasionally.
7. Adjust Seasoning:
- Taste the soup and adjust the seasoning with salt and pepper if necessary.
