Instructions:

1. Activate the Yeast:

- Add 1 teaspoon of sugar (5g) and 1 teaspoon of yeast (5g) to the water.
- Stir gently and let it sit for about 5-10 minutes, until it becomes frothy. This means the yeast is active.
2. Prepare the Dough:
- In a large mixing bowl, combine 1½ cups of all-purpose white wheat flour (190g) and a dash of salt (1g).
- Make a well in the center and pour in the frothy yeast mixture.
- Add 1 tablespoon of olive oil (13.5g).
- Mix until the dough starts to come together.
3. Knead the Dough:
- Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic.
- If the dough is too sticky, you can add a little more flour, one tablespoon at a time. If it is too dry, you can add a little more water, one teaspoon at a time.
4. First Rise:
- Lightly coat a clean bowl with the remaining 1 tablespoon of olive oil (13.5g).
- Place the dough in the bowl, turning it to coat with oil.
- Cover the bowl with a clean kitchen towel or plastic wrap.
- Allow the dough to rise in a warm, draft-free place for about 1 to 1½ hours, or until it has doubled in size.
5. Prepare the Garlic Mixture:
- While the dough is rising, peel and finely mince 2 garlic cloves (6g).
- Preheat a small skillet over medium heat, and add a short spray of cooking spray oil (0.30g).
- Sauté the minced garlic for about 1-2 minutes until it is fragrant but not browned. Set aside.
6. Form the Pizza Base:
- Preheat your oven to 475°F (245°C). If you are using a pizza stone, place it in the oven to heat up.
- Punch down the risen dough to release the air.
- Transfer the dough to a lightly floured surface and roll it out into a round shape, about 12 inches in diameter.
7. Assemble the Pizza:
- Place the rolled-out dough on a pizza peel or baking sheet lined with parchment paper if you do not have a pizza stone.
- Evenly spread the sautéed garlic across the surface of the dough.
