Delicious skinny meatloaf

Welcome to a healthier twist on a classic comfort food – Delicious Skinny Meatloaf. This recipe maintains all the savory flavors you love but cuts back on some of the calories without sacrificing taste. Perfect for a family dinner or meal prep, this meatloaf is both nutritious and satisfying.

Ingredients:

1 lb ground beef (80/20%)
450g
1/3 cup bread crumbs
36g
1 cup onion
160g
2 egg whites
63g
3 tbsp ketchup
44g
1 tbsp mustard
16g
1 tbsp worcestershire sauce
16g
1/4 tsp salt
1.50g
1 dash black pepper
1/10g
1/4 cup ketchup
60g
1 tbsp mustard
16g
2 tsp brown sugar
9g

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C).
2. Prepare Ingredients:
Finely chop the onion and set aside.
3. Mix Meatloaf:
In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, egg whites, 3 tablespoons of ketchup, 1 tablespoon of mustard, Worcestershire sauce, salt, and a dash of black pepper. Mix everything together thoroughly, but avoid over-mixing to keep the meatloaf from becoming too dense.
4. Shape Meatloaf:
Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper. Press down gently to ensure the loaf holds its shape.
5. Prepare Topping:
In a small bowl, mix 1/4 cup of ketchup, 1 tablespoon of mustard, and 2 teaspoons of brown sugar until well combined.
6. Apply Topping:
Spread the prepared topping mixture evenly over the top of the meatloaf.
7. Bake:
Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
8. Rest and Serve:
Once baked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute, making it easier to slice.
9. Serve:
Slice the meatloaf and serve with your favorite sides such as mashed potatoes, steamed vegetables, or a fresh salad.

Tips:

- For extra moisture, soak the bread crumbs in a little milk before adding them to the meat mixture.

- Finely dice the onions to ensure they cook thoroughly and blend seamlessly with the meat.

- Don't overmix the ground beef as it can become too dense – mix just until combined.

- For a slightly different flavor profile, consider adding herbs like parsley or thyme to the mixture.

- Let the meatloaf rest for about 10 minutes after baking to make slicing easier and to allow the flavors to meld.

With minimal effort and a few healthier ingredient swaps, you’ve created a delicious skinny meatloaf that doesn't skimp on flavor. Pair it with steamed vegetables or a side salad for a wholesome meal that you can feel good about serving your family. Enjoy your tasty, leaner meatloaf!
