Ingredients:

2 tbsp corn flour

Instructions:

1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch pie pan or line it with parchment paper for easier removal.
2. Prepare Pie Crust:
- In a large mixing bowl, combine the all-purpose white wheat flour and powdered sugar.
- Add the melted butter into the dry mixture and mix until it forms a dough.
- Press the dough evenly into the bottom and up the sides of the prepared pie pan.
- Prick the bottom of the crust with a fork to prevent bubbling.
- Bake the crust in the preheated oven for about 15 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
3. Prepare the Filling:
- In a medium saucepan over low heat, combine the brown sugar, honey, and milk.
- Stir continuously until the mixture is smooth and the sugar has completely dissolved.
- Once dissolved, remove from heat and allow it to cool for a few minutes.
- In a small mixing bowl, lightly beat the egg yolk.
- Slowly whisk the slightly cooled mixture into the beaten egg yolk to temper it, ensuring not to cook the yolk.
- Stir in the corn flour until the mixture is smooth and has no lumps.
4. Assemble the Pie:
- Evenly scatter the macadamia nuts over the pre-baked pie crust.
- Pour the honey and sugar mixture over the macadamia nuts, making sure they are well-coated.
5. Bake the Pie:
- Place the assembled pie back into the preheated oven.
- Bake for about 30-35 minutes or until the filling is set and has turned a nice caramel color.
- If the crust edges start to darken too quickly, cover them with strips of aluminum foil to prevent burning.
6. Cool and Serve:
- Remove the pie from the oven and let it cool completely on a wire rack.
