Juicy lemon and garlic chicken is a delightful and easy-to-make dish that will impress your family and friends. This recipe combines the zesty flavor of lemons, the aromatic essence of garlic, and a blend of fresh herbs to create a succulent roasted chicken. Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
Thoroughly rinse the whole chicken under cold water and pat dry with paper towels. Ensure you remove any giblets from the cavity if present.
3. Seasoning:
Place the chicken in a roasting pan. Squeeze the juice from one of the lemons over the chicken and inside the cavity. Add the minced garlic cloves inside the cavity and under the skin of the chicken.
4. Stuff the Chicken:
Stuff the cavity of the chicken with the quartered onions, one lemon half, half of the basil leaves, and a handful of thyme sprigs.
5. Herb Mixture:
In a small bowl, mix the olive oil with the remaining basil leaves and thyme leaves. Rub this herb mixture generously all over the chicken, underneath the skin, and ensure it's well-coated.
6. Final Touches:
Place the remaining lemon halves around the chicken in the roasting pan. Pour the chicken gravy over the chicken to ensure it remains juicy as it cooks.
7. Roasting:
Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C), and the skin is golden brown and crisp. Baste the chicken with the pan juices occasionally to keep it moist.
8. Rest the Chicken:
Once cooked, remove the chicken from the oven and let it rest for about 10-15 minutes to allow the juices to redistribute.
9. Carve and Serve:
