Ingredients:

1/4 cup brown rice

Instructions:

- Rinse 1/4 cup of brown rice under cold water until the water runs clear. This will remove excess starch.
- In a small saucepan, combine the rinsed rice with approximately 1/2 cup of water. The general rule is to use double the amount of water to rice.
- Bring the water to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer. Cook the rice for about 35-40 minutes, or until all the water is absorbed and the rice is tender. If needed, add more water and continue cooking until the rice is done.
- Optionally, add a pinch of salt to the water to enhance the flavor while cooking.
2. Prepare the Chives and Feta:
- While the rice is cooking, finely chop 2 tablespoons of fresh chives.
- Crumble 1/4 cup of feta cheese into small pieces if it’s not already crumbled.
3. Combine Ingredients:
- Once the rice is cooked, remove it from the heat and let it sit covered for about 5 minutes. This will allow it to steam and become fluffier.
- Fluff the rice with a fork to separate the grains.
4. Mix and Serve:
- Transfer the cooked rice to a mixing bowl or leave it in the saucepan.
- Add the crumbled feta cheese and chopped chives to the rice.
- Gently mix everything together until the feta is evenly distributed and the chives are well incorporated.
- Optionally, drizzle a small amount of olive oil or add a dab of butter for a richer flavor.
5. Taste and Adjust:
