Ingredients:

1/4 cup butter

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Prepare 4-6 ramekins by lightly greasing them with butter.
2. Cream Butter & Sugar:
In a large mixing bowl, beat together the butter and sugar using a hand mixer or stand mixer until the mixture is light and fluffy.
3. Add Zests:
Incorporate the lemon zest and lime zest into the butter-sugar mixture. Blend well so that the zests are evenly distributed.
4. Separate Eggs:
Separate the egg yolks from the whites. Set the egg whites aside in a clean bowl.
5. Combine Egg Yolks, Milk, and Flour:
Add the egg yolks to the butter-sugar-zest mixture and mix until smooth. Gradually add the flour and milk, mixing continuously until you achieve a smooth batter.
6. Beat Egg Whites:
In a separate clean bowl, whisk the egg whites until they form stiff peaks. This is vital for creating a fluffy texture in your pudding.
7. Fold Egg Whites:
Gently fold the whipped egg whites into the lemon-lime batter. Be careful not to deflate the egg whites as you fold them in. The batter should be light and airy.
8. Fill Ramekins:
Divide the batter evenly among the prepared ramekins.
9. Prepare Water Bath:
Place the filled ramekins in a large baking dish. Carefully pour hot water into the baking dish around the ramekins until the water reaches halfway up the sides of the ramekins. This water bath will help the puddings cook evenly and gently.
10. Bake:
Transfer the baking dish with ramekins to the preheated oven. Bake for 25-30 minutes, or until the puddings are set and lightly golden on top. The puddings should have a light, spongy top with a creamy, custard-like layer underneath.
11. Cool & Serve:
Remove the ramekins from the water bath and let them cool for a few minutes. Serve warm or at room temperature, either plain or with a dusting of powdered sugar and a dollop of whipped cream if desired.
