3. Boil Potatoes: Place the potato chunks into a large pot of salted water. Bring the water to a boil and cook the potatoes for about 5-7 minutes until they are just starting to soften but are still firm.
4. Drain Potatoes: Drain the potatoes in a colander and let them sit for a minute to allow any excess moisture to evaporate.
5. Prepare Lemon Mixture: While the potatoes are draining, zest the lemons and then juice them to get approximately 1/3 cup lemon juice. In a small bowl, mix the lemon zest, lemon juice, vegetable oil, dried oregano, bay leaves, salt, and pepper.
6. Combine Potatoes with Lemon Mixture: Place the drained potatoes into a large mixing bowl. Pour the lemon mixture over the potatoes and toss them carefully to ensure all pieces are well-coated.
7. Arrange on Baking Sheet: Transfer the coated potatoes onto a baking sheet in a single layer. Pour any remaining lemon mixture over the potatoes.
