This recipe combines the earthiness of mushrooms with the fresh taste of spinach, all brought together in a rich and comforting risotto. Ingredients:

Instructions:

1. Prepare the Ingredients:
- Finely chop the onion.
- Slice the mushrooms.
- Roughly chop the spinach.
- Grate the parmesan cheese.
2. Heat the Stock:
- In a saucepan, warm the chicken gravy over low heat. Keep it on a gentle simmer.
3. Sauté the Vegetables:
- In a large heavy-bottomed pot or deep skillet, heat 1 tbsp of olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add sliced mushrooms and cook until they are tender and have released their moisture, about 5-6 minutes.
4. Cook the Rice:
- Stir in the white rice and cook for about 1-2 minutes until the rice is well-coated with oil, slightly translucent around the edges, and has a slightly nutty aroma.
- Pour in the white wine and stir continuously until it is fully absorbed by the rice.
5. Add the Stock Gradually:
- Begin adding the warm chicken gravy one ladle at a time, stirring continuously. Wait until each ladleful is absorbed before adding the next.
- Continue this process, gradually adding the stock, until the rice is creamy and tender but still al dente, about 18-20 minutes. You may not need all the gravy, or you may need a bit more depending on the rice you are using.
6. Finish with Spinach and Butter:
- Once the rice is cooked to your desired consistency, stir in the chopped spinach until it wilts and is well incorporated.
- Add the 2 tbsp of butter and stir until melted and combined.
7. Add Cheese and Serve:
- Remove the pot from the heat and stir in the grated parmesan cheese until melted and creamy.
- Taste and adjust seasoning with salt and freshly ground black pepper if needed.
8. Plating:
- Spoon the risotto into warm bowls and, if desired, garnish with additional parmesan cheese and a drizzle of olive oil or a sprinkle of fresh herbs.
