3 lb whole chicken

2. Prepare the Chicken:
- Remove the giblets from the chicken cavity if present, and thoroughly rinse the chicken inside and out under cold running water. Pat dry with paper towels.
3. Prepare the Compound Butter:
- In a medium bowl, combine the softened butter, chopped pistachio nuts, orange zest, and dried sage. Mix well until all the ingredients are evenly incorporated.
4. Season the Chicken:
- Gently loosen the skin on the breast of the chicken by sliding your fingers between the skin and the meat. Be careful not to tear the skin.
- Spread a portion of the compound butter under the skin, directly on the breast meat. Use your hands to distribute the butter evenly.
- Rub the remaining compound butter all over the outside of the chicken, ensuring even coverage.
- Season the chicken with salt and pepper to taste, inside and out.
5. Prepare for Roasting:
- Lightly spray a baking dish or roasting pan with cooking spray oil.
- Place the prepared chicken breast-side up in the dish.
6. Roast the Chicken:
- Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes (or until the internal temperature reaches 165°F (74°C) when measured at the thickest part of the thigh).
- Halfway through the cooking time, baste the chicken with juices from the pan to ensure a juicy and flavorful result.
