- Peel and roughly chop the garlic cloves.
2. Cook the Onion and Garlic:
- Heat 1 tablespoon of olive oil in a large saucepan over medium heat.
- Add the chopped onion to the pan and sauté for about 5-7 minutes until the onion becomes translucent and tender.
- Add the chopped garlic to the pan and sauté for another 1-2 minutes, stirring occasionally to prevent burning.
3. Add the Peas and Broth:
- Add 1/3 cup of peas to the saucepan.
- Pour in 4 cups of vegetable broth.
- Stir well and bring the mixture to a boil.
4. Simmer the Soup:
- Once it boils, reduce the heat to low and let the soup simmer for about 10-15 minutes until the peas are cooked through and tender.
5. Blend the Soup:
- Carefully transfer the soup to a blender or use an immersion blender directly in the pan.
- Add the 1/4 cup of coriander leaves to the soup.
- Blend the mixture until smooth and creamy. If you prefer a chunkier consistency, blend less.
6. Season to Taste:
- Taste the soup and season with salt and pepper if needed. You can add more broth if the soup is too thick for your liking.
7. Serve:
- Ladle the hot soup into bowls.
