Potato, bacon & blue cheese bake

Delight your taste buds with this decadent Potato, Bacon & Blue Cheese Bake. This comforting dish combines the earthy flavors of potatoes with the savory richness of bacon, the sharp tang of blue cheese, and the creamy goodness of heavy whipping cream. It's the perfect indulgent side dish or main course that will leave everyone at the table asking for more!

Ingredients:

10 bacon strips
250g
5 potatoes
1000g
2 red onions
320g
1/2 cup grated parmesan cheese
40g
salt & pepper to taste
1 tbsp fresh thyme
16g
3/4 cup heavy whipping cream
170g
2/3 cup chicken gravy
130g

Instructions:

1. Prepare Ingredients:
- Preheat your oven to 375°F (190°C).
- Peel the potatoes and slice them thinly. Rinse the slices in cold water and pat them dry.
- Thinly slice the red onions.
- Chop the fresh thyme finely.
2. Cook the Bacon:
- In a large skillet over medium heat, cook the bacon strips until they are crispy.
- Remove the bacon from the skillet and place them on paper towels to drain the excess fat.
- Once cooled, crumble the bacon into small pieces.
3. Layer the Bake:
- In a greased baking dish, arrange a layer of potato slices.
- Top with a layer of sliced red onions, a sprinkle of crumbled bacon, a little Parmesan cheese, and a pinch of fresh thyme.
- Season with salt and pepper to taste.
- Repeat the layers until all the ingredients are used, finishing with a top layer of potatoes and a final sprinkle of Parmesan cheese.
4. Prepare the Cream Mixture:
- In a bowl, combine the heavy whipping cream and chicken gravy. Stir well until fully combined.
- Pour the cream mixture evenly over the layered ingredients in the baking dish.
5. Bake:
- Cover the baking dish with aluminum foil and place it in the preheated oven.
- Bake for 45 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
6. Serve:
- Let the bake sit for a few minutes before serving to allow the flavors to meld together.
- Serve warm as a delicious side dish or a hearty main course.

Tips:

- Pre-cook the bacon until it's crispy to avoid any chewy texture in the final dish.

- Slice the potatoes very thinly to ensure they cook evenly and have a tender, creamy texture.

- For an extra layer of flavor, consider adding a sprinkle of nutmeg or garlic powder to the cream mixture.

- Let the bake rest for a few minutes after removing it from the oven. This helps the flavors to meld together and makes it easier to serve.

- If you prefer a stronger cheese flavor, you can substitute blue cheese with a more pungent variety like Gorgonzola.

- Use a mandoline to ensure consistent potato slices, which will help in even cooking.

- For a healthier twist, try using sweet potatoes instead of regular potatoes.

This Potato, Bacon & Blue Cheese Bake is a crowd-pleaser that combines rich flavors and creamy textures in every bite. Whether served as a side or a main dish, it's bound to become a family favorite. Enjoy the blend of savory and tangy notes, and don't forget to garnish with extra thyme for a touch of freshness.
