Instructions:

1. Prepare the Potatoes:
- Begin by thoroughly washing the potatoes to remove any dirt. You can peel them at this stage if you prefer, but leaving the skin on can help retain more nutrients during cooking.
2. Boil the Potatoes:
- Place the potatoes in a large pot and fill with enough cold water to cover them by about an inch. Add a pinch of salt to the water.
- Bring the water to a boil over high heat.
- Once boiling, reduce the heat to medium and cook the potatoes for 15-20 minutes, or until they are tender and easily pierced with a knife or fork.
3. Drain and Mash:
- Drain the cooked potatoes in a colander and allow them to cool slightly.
- Once they are cool enough to handle, peel the potatoes (if you didn’t do this before boiling) and mash them using a potato masher or ricer until smooth.
4. Mix the Dough:
- Transfer the mashed potatoes to a large mixing bowl. Season with salt and pepper to taste.
- Add the grated Parmesan cheese and the egg.
- Mix everything together with a fork until the ingredients are evenly incorporated and form a dough.
5. Form the Gnocchi:
- Lightly flour a clean surface. Take a portion of the dough and roll it into a rope about 1-inch (2.5 cm) in thickness.
- Cut the rope into 1-inch (2.5 cm) pieces. If desired, you can press each piece with a fork to create ridges, which helps the gnocchi hold onto sauces better.
6. Cook the Gnocchi:
- Bring a large pot of salted water to a boil.
- Add the gnocchi in small batches. They are cooked when they float to the surface, which should take about 2-4 minutes.
- Use a slotted spoon to gently remove the gnocchi from the water and transfer them to a baking sheet lined with a clean tea towel or plastic wrap to cool slightly.
7. Serve:
- Serve the gnocchi immediately with your favorite sauce, such as marinara, pesto, or browned butter and sage.
8. Optional (Searing for Extra Flavor):
- If you prefer your gnocchi lightly crisped, you can sauté them in a skillet with a little butter or olive oil until golden brown on the outside.

Tips:

- Choose starchy potatoes like Russets for the best texture.

- Boil the potatoes with their skins on to prevent them from absorbing too much water.

- After boiling, let the potatoes cool slightly before peeling them to avoid burning your hands.

- For a smooth dough, use a potato ricer or a fine grater to mash the potatoes.

- Do not overwork the dough to prevent it from becoming gluey.
