600g
2 tbsp chives
30g
2 zucchini
400g
1.50 cups cherry tomatoes
270g

230g

Instructions:

1. Preheat Your Oven: Preheat your oven to 350°F (175°C).
2. Prepare the Muffin Pan: Lightly spray a 12-cup muffin pan with cooking spray oil to prevent sticking.
3. Cook the Prosciutto: Chop the prosciutto into small pieces and evenly distribute them into the muffin pan cups.
4. Mix the Eggs: In a large bowl, crack the 12 eggs. Whisk them thoroughly until the whites and yolks are fully combined and the mixture is slightly frothy.
5. Add the Chives and Zucchini:
- Wash the zucchinis thoroughly and grate them using a box grater.
- Squeeze out any excess moisture from the grated zucchini using a clean kitchen towel or paper towel.
- Add the grated zucchini and chopped chives into the egg mixture. Stir until well combined.
6. Distribute the Egg Mixture: Pour the egg mixture into the muffin cups, filling each one about 2/3 full.
7. Top with Cherry Tomatoes and Feta:
- Halve the cherry tomatoes and place a few halves on top of the egg mixture in each muffin cup.
- Crumble the feta cheese and evenly sprinkle it over the tops of the pies.
8. Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the pies are set and lightly golden on top.
9. Cool and Serve:
- Remove the muffin pan from the oven and let the pies cool in the pan for about 5 minutes.
- Carefully remove each pie from the muffin pan using a knife or small spatula.
10. Enjoy: Serve the Prosciutto & Zucchini Pies warm or at room temperature. They make a great breakfast, brunch, or snack!
