2. Prepare the Muffin Pan: Lightly spray a 12-cup muffin pan with cooking spray oil to prevent sticking.
3. Cook the Prosciutto: Chop the prosciutto into small pieces and evenly distribute them into the muffin pan cups.
4. Mix the Eggs: In a large bowl, crack the 12 eggs. Whisk them thoroughly until the whites and yolks are fully combined and the mixture is slightly frothy.
5. Add the Chives and Zucchini:
- Wash the zucchinis thoroughly and grate them using a box grater.
- Squeeze out any excess moisture from the grated zucchini using a clean kitchen towel or paper towel.
- Add the grated zucchini and chopped chives into the egg mixture. Stir until well combined.
6. Distribute the Egg Mixture: Pour the egg mixture into the muffin cups, filling each one about 2/3 full.
