Instructions:

1. Prepare Ingredients:

- Juice the lemon and set aside the juice.
- Chop the fresh spearmint leaves.

- In a large pot, heat the 1 tbsp of olive oil over medium heat.
- Add the chopped onion, and sauté for about 3-4 minutes, until the onion begins to turn translucent.
- Add diced carrots and celery to the pot, and sauté for another 5 minutes, stirring occasionally.
- Add the minced garlic and continue to sauté for an additional 1-2 minutes until fragrant.
3. Add Seasonings:
- Stir in 1 tsp of ground cumin and cook for about 30 seconds until it becomes aromatic.
4. Add Tomatoes and Lentils:
- Add the crushed canned tomatoes to the pot and stir to combine.
- Pour in the rinsed and drained red lentils and give it a good mix.
- Add the 2 cups of water to the pot and stir to integrate all ingredients.

- Bring the mixture to a boil. Once boiling, reduce the heat to a simmer.

6. Finish with Lemon and Spearmint:

- Add lemon juice to taste, starting with half of the juiced lemon and adding more as desired.
