Ingredients:

1 tbsp olive oil
2 red onions
2 tbsp vinegar
1 tsp brown sugar
1 large zucchini
salt & pepper to taste
2 cups all-purpose white wheat flour
1/2 cup butter
3/4 cup feta cheese
1.50 cups cherry tomatoes

Red onion relish & vegetable tart is a delightful and savory dish that combines the sweetness of caramelized red onions with the freshness of zucchini and cherry tomatoes, all nestled in a crumbly, buttery tart crust. Instructions:

1. Prepare the Tart Crust:
- In a large bowl, combine the all-purpose flour and a pinch of salt. Add the cold butter pieces.
- Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
- Add cold water, one tablespoon at a time, mixing until the dough starts to come together.

- Transfer the dough to a tart pan, pressing it gently into the sides and trimming any excess dough.

- Arrange the zucchini slices in an overlapping pattern on top of the relish.
- Scatter the feta cheese crumbles over the zucchini.
- Finally, evenly distribute the halved cherry tomatoes on top.
5. Bake the Tart:
- Place the tart in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the vegetables are tender.
- Remove from the oven and let cool slightly before slicing.
