680g
1 large zucchini

1 egg
50g
1/2 cup bread crumbs
44g
2 tbsp BBQ sauce
30g
1 tbsp worcestershire sauce
16g
1 tbsp mustard
16g
1/4 cup fresh parsley
16g
1/2 cup cheddar cheese
50g
3 cups pumpkin
360g
3 potatoes
600g
1 tbsp butter
16g
2 tbsp milk (1% fat)
30g

Instructions:

1. Preparation:
- Preheat your oven to 375°F (190°C).
- Grease a loaf pan or line it with parchment paper.
2. Cook Onion and Garlic:
- Heat 1 tbsp olive oil in a medium skillet over medium heat.
- Add the chopped onion and cook for about 5-7 minutes until translucent.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Remove from heat and let it cool slightly.
3. Prepare Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, grated zucchini, peas, beaten egg, bread crumbs, BBQ sauce, Worcestershire sauce, mustard, fresh parsley, and the cooled onion and garlic mixture.
- Mix well until all ingredients are evenly incorporated.
4. Form and Bake Meatloaf:
- Transfer the meat mixture into the prepared loaf pan and press it down evenly.
- Sprinkle the grated cheddar cheese on top.
- Place the loaf pan in the preheated oven and bake for about 45-50 minutes or until the meatloaf is cooked through (an internal temperature of 160°F/71°C).
5. Prepare Sides:
- While the meatloaf is baking, place the cubed pumpkin and potatoes in a large pot and cover with water.
- Bring to a boil and cook for about 20 minutes or until the vegetables are tender.
- Drain and return the vegetables to the pot.
- Add the butter and milk, and mash until smooth.
- Season with salt and pepper to taste.
6. Serve:
- Once the meatloaf is ready, remove it from the oven and let it rest for about 10 minutes before slicing.
- Serve slices of meatloaf with a generous portion of mashed pumpkin and potatoes on the side.

Tips:

- For a juicier meatloaf, avoid overmixing the ground beef as it can result in a denser texture.

- Grate the zucchini finely to ensure it blends well with the meat mixture and adds moisture.

- Use freshly grated cheddar cheese for a better melt and more robust flavor.

- If you prefer, you can substitute the ground beef with a mix of ground pork and beef for extra flavor.

- Feel free to add your favorite herbs and spices to customize the meatloaf to your taste.

- Ensure the meatloaf reaches an internal temperature of 160°F (71°C) to be fully cooked.

- Leftover meatloaf makes great sandwiches or can be crumbled into a hearty pasta sauce.

By following the steps outlined in this recipe, you'll have a delicious and hearty roast dinner meatloaf ready to serve. The combination of ground beef, vegetables, and savory seasonings creates a mouth-watering dish that pairs perfectly with mashed potatoes and roasted pumpkin. Enjoy your tasty and comforting meal!
