Roast Garlic & Spinach Puree is a delightful, nutrient-packed dish that can be used as a spread, dip, or added to various recipes for a rich, savory flavor. This dish highlights the robust taste of roasted garlic combined with the earthy tones of spinach and the nuttiness of walnuts, all brightened with a touch of lemon juice.

Ingredients:

2 garlic cloves

Instructions:

2. Prepare the Spinach:
- While the garlic is roasting, wash the spinach thoroughly under cold water.
- Bring a large pot of water to a boil. Add the spinach and blanch for 30 seconds. Quickly transfer the spinach to a bowl of ice water to stop the cooking process.
- Once the spinach is cool, drain it and squeeze out any excess water. Set aside.
3. Prepare the Walnuts:
- Lightly toast the walnuts in a dry skillet over medium heat for about 3-4 minutes, until they are fragrant. Be careful not to burn them. Remove from the skillet and let them cool.
4. Blend the Ingredients:
- In a blender or food processor, combine the roasted garlic, blanched spinach, toasted walnuts, lemon juice, and the remaining olive oil.
- Blend until smooth, scraping down the sides as needed to ensure an even puree. If the mixture is too thick, you can add a bit more olive oil or a splash of water to achieve your desired consistency.
5. Season and Serve:
- Taste the puree and season with salt and pepper as needed.
