Ingredients:

1 cup lentils

Instructions:

1. Cook the Lentils:
- Rinse 1 cup of lentils under cold water.
- In a medium pot, combine the lentils with 3 cups of water.
- Bring to a boil, then reduce the heat and simmer until tender, about 20-25 minutes.
- Drain any excess water and set the lentils aside.
2. Prepare the Sweet Potatoes:
- While the lentils are cooking, peel and dice the 2 sweet potatoes into small cubes.
- Preheat your oven to 400°F (200°C).
- Place the sweet potato cubes on a baking sheet, drizzle with a little olive oil, and season with salt and pepper.

3. Prepare the Onions and Garlic:
- Finely chop the 3 stalks of onions.
- Mince the 1 garlic clove.

- In a small bowl, whisk together the 2 tbsp sesame butter, 2 tbsp mustard, 1 tbsp soy sauce, 1 tbsp lime juice, 2 tsp maple syrup, and 1/8 tsp red pepper until smooth.
