Instructions:

- Add the 4 cups of fresh spinach to the skillet.
- Cook the spinach, stirring occasionally, until it is wilted and tender, about 3-4 minutes.
- Remove the skillet from heat and let the spinach cool slightly.
3. Make the Filling:
- In a medium bowl, beat 1 egg.
- Add the cooled spinach and 1/2 cup of crumbled feta cheese to the bowl with the egg.
- Stir the mixture until all ingredients are well combined. Set aside.
4. Prepare the Puff Pastry:
- On a lightly floured surface, unfold and roll out the puff pastry sheets to smooth out any folds or creases.
- Cut each puff pastry sheet into 4 equal squares. You should have a total of 8 squares.
5. Assemble the Turnovers:
- Place a spoonful of the spinach and feta mixture in the center of each puff pastry square.
- Fold each square into a triangle by bringing one corner over the filling to the opposite corner.
- Press the edges together firmly to seal, and then crimp the edges with a fork to ensure they are sealed properly.
