Spinach & feta turnovers

Spinach & feta turnovers are a delightful and savory treat, perfect for breakfast, brunch, or even a quick snack. Combining the earthy flavors of spinach with the tangy taste of feta cheese, encased in golden, flaky puff pastry, these turnovers are sure to become a favorite in your household.

Ingredients:

2 tsp olive oil
9g
4 cups spinach
120g
2 eggs
100g
1/2 cup feta cheese
120g
2 sheets puff pastry
500g

Instructions:

1. Preheat Oven:
- Preheat your oven to 375°F (190°C) to prepare for baking the turnovers.
2. Prepare the Spinach:
- Heat 2 teaspoons of olive oil in a large skillet over medium heat.
- Add the 4 cups of fresh spinach to the skillet.
- Cook the spinach, stirring occasionally, until it is wilted and tender, about 3-4 minutes.
- Remove the skillet from heat and let the spinach cool slightly.
3. Make the Filling:
- In a medium bowl, beat 1 egg.
- Add the cooled spinach and 1/2 cup of crumbled feta cheese to the bowl with the egg.
- Stir the mixture until all ingredients are well combined. Set aside.
4. Prepare the Puff Pastry:
- On a lightly floured surface, unfold and roll out the puff pastry sheets to smooth out any folds or creases.
- Cut each puff pastry sheet into 4 equal squares. You should have a total of 8 squares.
5. Assemble the Turnovers:
- Place a spoonful of the spinach and feta mixture in the center of each puff pastry square.
- Fold each square into a triangle by bringing one corner over the filling to the opposite corner.
- Press the edges together firmly to seal, and then crimp the edges with a fork to ensure they are sealed properly.
6. Prepare the Egg Wash:
- Beat the remaining egg in a small bowl.
- Brush the tops of the turnovers with the beaten egg. This will help them achieve a beautiful golden color when baked.
7. Bake:
- Place the turnovers on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and puffed.
8. Serve:
- Remove the turnovers from the oven and let them cool for a few minutes.
- Serve warm and enjoy these delicious spinach and feta turnovers as a snack, appetizer, or light meal!

Tips:

- Ensure the spinach is thoroughly washed and well-drained before cooking to avoid excess moisture in the filling.

- If using frozen puff pastry, let it thaw completely before handling to prevent tearing.

- Brush the edges of the puff pastry with a little beaten egg to help seal the turnovers properly.

- Experiment with adding herbs like dill or parsley to the spinach and feta mixture for extra flavor.

- Serve the turnovers warm, but let them cool slightly after baking to avoid a too-hot filling.

Spinach & feta turnovers are not only easy to make, but they also offer a delicious way to incorporate nutritious greens into your diet. With these tips in mind, you'll be able to craft perfectly flaky and flavorful turnovers that are sure to impress family and friends alike. Enjoy this versatile and tasty dish!
