Instructions:

1. Preheat Your Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it for later use.
2. Prepare Vienna Sausage:
Slice the Vienna sausages into small bite-sized pieces. Set aside.
3. Cook the Eggs:
- In a medium bowl, whisk the 3 eggs until they are well beaten.
- Heat a non-stick skillet over medium heat. Add the whisked eggs and cook, stirring gently with a spatula until they are scrambled and fully cooked. Remove from heat.
4. Assemble the Filling:
- In a large bowl, combine the cooked scrambled eggs, sliced Vienna sausage, chopped sun-dried tomatoes, and diced avocado. Mix gently to combine all the ingredients evenly.
5. Assemble the Taquitos:
- Lay out a tortilla on a clean surface.
- Place about 2 tablespoons of the filling onto the center of the tortilla.
- Sprinkle a generous amount of shredded cheddar cheese over the filling.
- Roll the tortilla tightly around the filling, folding in the sides as you go to prevent the filling from spilling out. Place the rolled taquito seam-side down on the prepared baking sheet.
- Repeat with the remaining tortillas and filling.
