Instructions:

2. Add the spaghetti and cook according to the package instructions until al dente.
3. Reserve about 1 cup of pasta water before draining the spaghetti.
2. Prepare the Leeks and Shrimp
1. While the pasta is cooking, heat 2 tablespoons of olive oil in a large, deep skillet over medium heat.
2. Add the thinly sliced leeks to the skillet, season with a pinch of salt, and sauté for about 5-7 minutes, or until the leeks are soft and translucent.
3. Increase the heat to medium-high and add the shrimp to the pan. Cook, stirring occasionally, for about 3-5 minutes or until the shrimp are pink and opaque.
3. Combine and Flavor
1. Add the cooked spaghetti to the skillet with the shrimp and leeks.
2. Add the lemon zest and chopped parsley. Toss to combine all ingredients well.
3. If the pasta seems dry, gradually add the reserved pasta water a little at a time until you reach the desired consistency.
4. Season to Taste
