Shrimp party pies

Shrimp Party Pies are a delightful appetizer or snack, perfect for gatherings and special occasions. These little pies are filled with a creamy, flavorful shrimp mixture and encased in golden, flaky puff pastry. The combination of leeks, garlic, shrimp, and herbs makes for an irresistible filling that will impress your guests. Follow these instructions to create a memorable and delicious treat!

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Filling:
- In a large skillet, melt the butter over medium heat.
- Add the finely chopped leek and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
3. Cook Shrimps:
- Add the shrimps to the skillet and cook until pink and opaque, about 3-4 minutes. Remove the shrimps and set aside.
4. Make the Sauce:
- Sprinkle the flour over the leek mixture and stir to combine. Cook for about 1 minute to remove the raw flour taste.
- Gradually add the fish sauce and white wine, stirring constantly to avoid lumps.
- Pour in the heavy whipping cream, bring to a simmer, and cook until the sauce has thickened, about 5-7 minutes.
5. Combine Ingredients:
- Return the cooked shrimps to the skillet and stir to combine.
- Add the lemon juice, dill, parsley, and mustard. Mix well.
- Season with salt and pepper to taste.
6. Prepare the Pastry:
- On a lightly floured surface, roll out the puff pastry sheets to about 1/8-inch thick.
- Cut the pastry into circles or squares, depending on your pie tin or muffin tin size.
- Line each pie tin or muffin tin with the pastry, pressing gently to fit.
7. Fill and Seal:
- Spoon the shrimp mixture into the pastry-lined tins, filling them just below the rim.
- Cut additional pastry circles or squares for the tops and place them over the filling.
- Press the edges to seal and trim any excess pastry. You can crimp the edges if desired.
8. Bake:
- Cut small slits or prick the tops with a fork to allow steam to escape.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
9. Serve:
- Remove the pies from the oven and let them cool slightly before serving.

Tips:

- Ensure your puff pastry is thawed but still cold to make it easier to handle and shape.

- Avoid overcooking the shrimp, as they will continue to cook slightly once they are mixed with the hot filling.

- Taste the shrimp filling for seasoning before filling the pastry to ensure it is well-balanced.

- Use a sharp knife or pastry cutter for neat, even edges on your party pies.

- Brush the tops of the pies with an egg wash (beaten egg) for a beautiful, golden-brown finish when baking.

Shrimp Party Pies are not only visually appealing but also packed with flavor. With a creamy shrimp filling and crisp puff pastry, these little morsels are sure to be a hit at any party or gathering.
