Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Filling:
- In a large skillet, melt the butter over medium heat.
- Add the finely chopped leek and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
3. Cook Shrimps:
- Add the shrimps to the skillet and cook until pink and opaque, about 3-4 minutes. Remove the shrimps and set aside.
4. Make the Sauce:
- Sprinkle the flour over the leek mixture and stir to combine. Cook for about 1 minute to remove the raw flour taste.
- Gradually add the fish sauce and white wine, stirring constantly to avoid lumps.
- Pour in the heavy whipping cream, bring to a simmer, and cook until the sauce has thickened, about 5-7 minutes.
5. Combine Ingredients:
- Return the cooked shrimps to the skillet and stir to combine.
- Add the lemon juice, dill, parsley, and mustard. Mix well.
- Season with salt and pepper to taste.
6. Prepare the Pastry:
- On a lightly floured surface, roll out the puff pastry sheets to about 1/8-inch thick.
- Cut the pastry into circles or squares, depending on your pie tin or muffin tin size.
- Line each pie tin or muffin tin with the pastry, pressing gently to fit.
7. Fill and Seal:
- Spoon the shrimp mixture into the pastry-lined tins, filling them just below the rim.
- Cut additional pastry circles or squares for the tops and place them over the filling.
- Press the edges to seal and trim any excess pastry. You can crimp the edges if desired.
8. Bake:
- Cut small slits or prick the tops with a fork to allow steam to escape.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.
