Smoked salmon croquettes

Smoked salmon croquettes are a delightful fusion of flavors and textures that make for an impressive appetizer or a satisfying meal. Combining the rich, smoky taste of salmon with the freshness of dill and the crispiness of bread crumbs, these croquettes are sure to be a hit at any gathering. Serve them with mixed greens and avocado for a well-rounded dish.

Instructions:

1. Prepare the Ingredients:
- Finely chop the smoked salmon and transfer it into a large mixing bowl.
- Finely chop the onion.
- Chop the dill.
2. Make the Croquette Mixture:
- Add the chopped onion, dill, and 1 beaten egg into the bowl with the smoked salmon.
- Mix thoroughly to combine all the ingredients.
3. Form the Croquettes:
- Shape the mixture into small patties or oval-shaped croquettes.
- In a shallow dish, place the bread crumbs.
- Lightly beat the second egg in another shallow dish.
4. Coat the Croquettes:
- Dip each croquette into the beaten egg, ensuring it is fully coated.
- Then, roll each croquette in the bread crumbs, pressing lightly to ensure an even coating.
5. Cook the Croquettes:
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the croquettes.
- Cook for about 3-4 minutes on each side, or until the croquettes are golden brown and crispy.
- Transfer to a paper towel-lined plate to drain any excess oil.
6. Prepare the Salad:
- In a large bowl, combine the mixed greens with the diced avocado.
- Drizzle with lemon juice and toss gently to combine.
7. Serve:
- Place the salad mix on serving plates.
- Arrange the smoked salmon croquettes on top of or alongside the salad.
- Serve immediately for the best texture and flavor.

Tips:

- For a more intense flavor, consider using hot-smoked salmon instead of cold-smoked salmon.

- Chill the croquettes in the refrigerator for at least 30 minutes before frying them. This will help them retain their shape during cooking.

- If you prefer a gluten-free version, use gluten-free bread crumbs instead of regular ones.

- Ensure that the oil is hot enough (around 350°F or 175°C) before adding the croquettes; this will ensure they become crispy without absorbing too much oil.

- Add a tablespoon of Greek yogurt to the avocado and lemon juice mixture for a creamier dipping sauce.

These smoked salmon croquettes are not only delicious but also straightforward to prepare. With their crisp exterior and flavorful interior, they make for an excellent dish that will impress your guests or provide a delightful meal for your family. Enjoy them hot and fresh, accompanied by your choice of greens and avocado.
