Mexican skillet rice casserole

Mexican skillet rice casserole is a delightful and flavorful dish that combines well-seasoned ground beef, aromatic spices, and hearty rice. This dish is perfect for a family dinner or a casual gathering with friends. Not only is it a complete meal in one skillet, but it's also incredibly easy to prepare.

Ingredients:

2 cups white rice
320g
1 tbsp olive oil
14g
2 cups onion
320g
4 garlic cloves
12g
1/2 lb ground beef (80/20%)
230g
2 tbsp chili powder
16g
1 tsp ground cumin
9g
1 tsp salt
6g
1 can black beans
420g
2 oz cheddar cheese
54g

Instructions:

1. Cook the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a medium pot, combine the rice with 4 cups of water.
- Bring to a boil over high heat, then reduce the heat to low.
- Cover and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat, fluff with a fork, and set aside.
2. Prepare the Skillet:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the finely chopped onion and cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes.
3. Cook the Ground Beef:
- Add the minced garlic to the skillet and cook for about 1 minute, until fragrant.
- Add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until it is browned and no longer pink, about 5-7 minutes.
- Drain any excess fat from the skillet.
4. Season the Meat:
- Sprinkle the chili powder, ground cumin, and salt over the cooked beef and onions.
- Stir well to combine, ensuring that the seasonings are evenly distributed.
5. Add the Beans:
- Stir in the drained and rinsed black beans.
- Cook for another 2-3 minutes, until the beans are heated through.
6. Combine and Heat:
- Add the cooked rice to the skillet with the beef and bean mixture.
- Stir well to combine all the ingredients.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
7. Add the Cheese:
- Sprinkle the shredded cheddar cheese over the top of the rice mixture.
- Cover the skillet and let it sit for about 2-3 minutes, until the cheese is melted.
8. Serve:
- Remove from heat and serve hot. Enjoy your Mexican Skillet Rice Casserole as is, or with your favorite toppings such as diced tomatoes, avocado slices, sour cream, or fresh cilantro.

Tips:

- Rinse the white rice before cooking to remove excess starch and prevent it from getting too sticky.

- If you prefer a bit more heat, consider adding a diced jalapeno or a pinch of cayenne pepper with the spices.

- For a vegetarian version, simply omit the ground beef and add extra black beans or your favorite veggies like bell peppers or zucchini.

- Use freshly grated cheddar cheese for the best melting consistency and flavor.

- Leftovers can be stored in the refrigerator for up to 3 days and make for a great next-day lunch.

With its rich flavors and comforting textures, Mexican skillet rice casserole is sure to become a favorite on your dinner table. The combination of well-seasoned ground beef, tender rice, and melted cheddar cheese makes for a hearty and satisfying meal. Plus, it's not only delicious but also quick to make, perfect for any weeknight dinner.
