Ingredients:

1/3 cup heavy whipping cream

Instructions:

1. Preparation:
- Hull and quarter the strawberries.
- Separate the egg yolks from the whites if you haven't done so already.
2. Cook the Strawberries:
- In a medium saucepan, add the strawberries and cook over medium heat until they begin to break down and release their juices, about 5-7 minutes.
- For a smoother consistency, mash the strawberries with a fork or use an immersion blender.
- Remove from heat and set aside to cool.
3. Prepare the Cream Base:
- In a mixing bowl, combine the heavy whipping cream and sugar. Whisk until the sugar is fully dissolved.
- Add the egg yolks to the cream mixture and whisk until well combined.
- Stir in the vanilla extract.
4. Cook the Custard:
- Pour the cream mixture into a saucepan and cook over medium-low heat, stirring constantly to avoid curdling, until the mixture thickens enough to coat the back of a spoon. This should take about 5-7 minutes.
- Be careful not to let the mixture boil.
5. Combine and Chill:
- Remove the custard from the heat and let it cool slightly.
- Add the cooked strawberries to the custard and mix until well combined.
- Transfer the mixture to a large bowl and cover with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming.
- Chill in the refrigerator for at least 4 hours, or overnight for best results.
6. Churn the Ice Cream:
- Once the mixture is thoroughly chilled, pour it into an ice cream maker.
- Churn according to the manufacturer’s instructions, usually about 20-25 minutes, until the ice cream reaches a soft-serve consistency.
7. Freeze:
- Transfer the churned ice cream to an airtight container.
- Freeze for an additional 2-4 hours, or until it reaches your desired firmness.
8. Serve:
- Scoop the ice cream into bowls or cones.
