Thai-style pumpkin soup is a flavorful and aromatic dish that brings together the creaminess of coconut milk and the richness of curry paste with the natural sweetness of pumpkin. This comforting soup is perfect for any occasion, and it's an excellent way to explore the vibrant and diverse flavors of Thai cuisine in your own kitchen.

Ingredients:

1 tbsp olive oil
14g
1 onion
160g
8 cups pumpkin
960g
2 cups potatoes
320g
2 garlic cloves
6g
1/3 cup curry paste
72g
2 cups chicken gravy
400g
2 cups coconut milk
460g
2 tbsp peanuts
30g
2 tsp coriander leaves
6g
1 cup scallions
50g
1 tsp lime juice
5g

Instructions:

1. Prepare Ingredients:
- Chop the onion.
- Peel and cube the pumpkin and potatoes.
- Mince the garlic.
- Chop the peanuts, coriander leaves, and scallions.
2. Cook the Vegetables:
- In a large pot, heat 1 tbsp of olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another 1-2 minutes until fragrant.
3. Add Pumpkin and Potatoes:
- Add the cubed pumpkin and potatoes to the pot.
- Stir to combine with the onion and garlic.
4. Incorporate the Curry Paste:
- Add the 1/3 cup of curry paste to the pot and stir thoroughly to coat the vegetables evenly.
5. Add Liquids:
- Pour in the 2 cups of chicken gravy and 2 cups of coconut milk.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer.
- Cook for about 20-25 minutes or until the pumpkin and potatoes are tender.
6. Blend the Soup:
- Use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a countertop blender in batches to blend, then return it to the pot.
7. Add Final Seasonings:
- Stir in the 2 tbsp of chopped peanuts, the 2 tsp of chopped coriander leaves, and the 1 cup of chopped scallions.
- Add 1 tsp of lime juice and stir to combine.
8. Serve:
- Ladle the soup into bowls.
- Garnish with additional chopped peanuts and coriander leaves if desired.
9. Enjoy!

Tips:

- When selecting pumpkins, opt for those with a dense, sweet flesh – sugar pumpkins or kabocha squash work well.

- For a thicker consistency, reduce the amount of chicken gravy or coconut milk used.

- For a vegan version, substitute chicken gravy with vegetable broth.

- Roast the pumpkin and potatoes beforehand for a deeper, richer flavor.

- Adjust the level of spiciness by varying the quantity of curry paste used.

- Blend the soup in batches or use an immersion blender for a smooth texture.

- Toasting the peanuts slightly before adding them will intensify their flavor.

- Serve the soup with a sprinkle of scallions and a drizzle of lime juice for a fresh and tangy finish.

This Thai-style pumpkin soup is not only hearty and delicious but also a wonderful fusion of flavors that will warm you up on a chilly day. Garnish with fresh coriander leaves and a squeeze of lime juice to elevate the taste. Enjoy this soup as an appetizer or a main dish, paired with crusty bread or steamed jasmine rice.
