Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Cauliflower:
- Wash and trim the cauliflower, then cut it into small florets.
- Bring a large pot of salted water to a boil, and add the cauliflower florets.
- Cook for about 5-7 minutes until the cauliflower is tender but still retains a bit of crunch.
- Drain the cauliflower and set aside.
3. Crisp the Prosciutto:
- Heat 2 teaspoons of olive oil in a pan over medium heat.
- Add the prosciutto slices and cook until they are crispy, flipping as needed. This should take about 5 minutes.
- Remove the prosciutto from the pan, let it cool, and then crumble it into small pieces.
4. Prepare the Cheese Sauce:
- In a medium saucepan, melt 1 tablespoon of butter over medium heat.
- Stir in 2 tablespoons of all-purpose flour and cook for about 1-2 minutes to form a roux, ensuring not to let it brown.
- Gradually whisk in 1.25 cups of milk until smooth.
- Continue to cook, stirring constantly until the mixture thickens, about 3-5 minutes.
- Remove from heat and stir in 1/3 cup of grated parmesan cheese and 1/3 cup of cheddar cheese until melted and smooth.
