2 tsp olive oil
9g
3 slices prosciutto
50g
1 tbsp butter
16g
2 tbsp all-purpose white wheat flour
30g
1.25 cups milk (1% fat)
300g
1/3 cup grated parmesan cheese
27g
1/3 cup cheddar cheese
55g
1/4 cup grated parmesan cheese
20g
1/2 cup bread crumbs
44g

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Cauliflower:
- Wash and trim the cauliflower, then cut it into small florets.
- Bring a large pot of salted water to a boil, and add the cauliflower florets.
- Cook for about 5-7 minutes until the cauliflower is tender but still retains a bit of crunch.
- Drain the cauliflower and set aside.
3. Crisp the Prosciutto:
- Heat 2 teaspoons of olive oil in a pan over medium heat.
- Add the prosciutto slices and cook until they are crispy, flipping as needed. This should take about 5 minutes.
- Remove the prosciutto from the pan, let it cool, and then crumble it into small pieces.
4. Prepare the Cheese Sauce:
- In a medium saucepan, melt 1 tablespoon of butter over medium heat.
- Stir in 2 tablespoons of all-purpose flour and cook for about 1-2 minutes to form a roux, ensuring not to let it brown.
- Gradually whisk in 1.25 cups of milk until smooth.
- Continue to cook, stirring constantly until the mixture thickens, about 3-5 minutes.
- Remove from heat and stir in 1/3 cup of grated parmesan cheese and 1/3 cup of cheddar cheese until melted and smooth.
- Taste and season with salt and pepper if desired.
5. Assemble the Bake:
- In a large baking dish, spread the cooked cauliflower evenly.
- Pour the cheese sauce over the cauliflower, ensuring it is evenly coated.
- Sprinkle the crumbled prosciutto over the top.
6. Prepare the Topping:
- In a small bowl, combine 1/4 cup of grated parmesan cheese with 1/2 cup of bread crumbs.
- Sprinkle this mixture evenly over the top of the cauliflower and cheese sauce.
7. Bake:
- Place the baking dish in the preheated oven and bake for 20-25 minutes or until the top is golden brown and crispy.
8. Serve:
- Remove from the oven and let cool slightly before serving.
- Enjoy your Three-Cheese Cauliflower Bake warm!

Tips:

- Ensure the cauliflower florets are of similar size to ensure even cooking.

- Use freshly grated cheese for better melting and richer flavors.

- The sauce should be continuously stirred to prevent any lumps from forming.

- For a crispier top, broil the dish for the last few minutes of baking.

- This dish can be prepared in advance and baked just before serving.

Our Three-cheese Cauliflower Bake is a delightful combination of creamy and crispy that is sure to please any palate. Whether you serve it as a side dish or a main course, the rich blend of cheeses and the slight crunch of prosciutto will make this recipe a beloved addition to your culinary repertoire.
