12 oz pasta
2 tbsp olive oil
1 onion
2 garlic cloves
1 lb tomatoes
1 tsp sugar
1 tbsp basil

3. Add the Tomatoes:
- Add the diced 1 lb (450g) fresh tomatoes to the skillet.
- Sprinkle in 1 tsp (5g) of sugar to balance the acidity of the tomatoes.
- Stir well and let the mixture simmer for about 10-15 minutes, until the tomatoes have broken down and the sauce has thickened.
- Season with salt and pepper to taste.
4. Combine the Pasta and Sauce:
- Add the cooked and drained pasta to the skillet with the tomato sauce.
- Toss to combine until the pasta is well coated with the sauce.
5. Finish with Basil:
- Stir in 1 tbsp (4g) of chopped fresh basil.
- Cook for another 1-2 minutes to let the flavors meld together.
6. Serve:
- Serve the pasta hot, garnished with additional fresh basil if desired.
- Optionally, sprinkle with grated Parmesan cheese before serving.
