Instructions:

1. Prepare the Ingredients:
- Thinly slice the onion.
- Shred the cheddar cheese if it's not pre-shredded.
- Slice or chop the turkey ham into manageable pieces.
2. Pickle the Onions:
- In a bowl, combine the thinly sliced onion and 1/4 cup of vinegar.
- Let the onions marinate for about 10-15 minutes. This will slightly pickle them and add a tangy flavor to the quesadillas.
- After marinating, drain the vinegar from the onions. Set the onions aside.
3. Assemble the Quesadillas:
- Lay out the 4 tortillas on a clean surface.
- Evenly distribute the turkey ham onto one half of each tortilla.
- Add the drained, pickled onions on top of the turkey ham.
- Sprinkle the shredded cheddar cheese evenly over the onions and turkey ham.
- Fold the other half of each tortilla over the filled half to create a semi-circle.
4. Cook the Quesadillas:
- Heat a large non-stick skillet or griddle over medium heat.
- Place one or two folded quesadillas in the skillet, depending on the size of your skillet.
- Cook each side for about 2-3 minutes until the tortillas are golden brown and crispy, and the cheese is melted. Press down lightly with a spatula to ensure even cooking.
- Repeat the process with the remaining quesadillas.
5. Serve:
- Once cooked, remove the quesadillas from the skillet and let them sit for a minute before slicing.
- Cut each quesadilla into wedges and serve immediately.
