Instructions:

* Preheat your oven to 375°F (190°C).
* Grease and flour a madeleine pan, or use a non-stick madeleine mold.
2. Make the Batter:
* In a mixing bowl, combine the eggs and the first 1/3 cup of sugar (63g).
* Beat the mixture with an electric mixer on high speed until thick and pale, which should take about 5 minutes.
* Add the vanilla extract and a dash of salt. Beat briefly to combine.
3. Combine Dry Ingredients:
* In another bowl, sift together the flour and baking powder.
4. Fold in Dry Ingredients:
* Gently fold the sifted flour mixture into the egg mixture, being careful not to deflate the batter.
* Gradually fold in the additional 1/3 cup of sugar (72g) to add sweetness and slight texture.

5. Fill the Molds:
* Spoon the batter into the prepared madeleine molds, filling each mold about three-quarters full.
* Tap the mold lightly on the counter to settle the batter.
6. Bake:
* Place the filled madeleine pan in the preheated oven.
* Bake for 8-10 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
7. Cool and Serve:
* Remove the baked madeleines from the oven and allow them to cool in the pan for a few minutes.
* Gently tap the pan to release the madeleines and transfer them to a wire rack to cool completely.
