- Peel and dice the potatoes. Set aside in a separate bowl.
3. Start Cooking the Soup:
- In a large pot, heat 4 tbsp of olive oil over medium heat.

- Add the sliced carrots, bay leaves, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
4. Simmer the Soup:
- Pour in the 6½ cups of water and bring to a boil.
- Once the water is boiling, add the diced potatoes to the pot.
- Reduce the heat to medium-low and simmer for about 15 minutes or until the potatoes are tender.
5. Add the Dumplings:
- While the soup is simmering, take small spoonfuls of the batter prepared earlier and drop them gently into the simmering soup. The dumplings will float to the top as they cook.
- Cook for an additional 10 minutes or until the dumplings are fully cooked through.
6. Final Seasoning:
- Stir in the dill and ½ tsp of salt (adjust to taste).
