Zebra cupcakes

Zebra cupcakes are a delightful and visually striking treat that combines layers of vanilla and chocolate batter to create a striped effect. They are perfect for parties, celebrations, or just as a fun baking project. With a delicious blend of buttery vanilla and rich cocoa flavors, these cupcakes are sure to be a hit with both kids and adults.

Ingredients:

1 cup butter
220g
1/2 cup sugar
100g
2 tsp vanilla extract
8g
2 eggs
100g
2 cups self-raising flour
300g
1 tbsp milk (1% fat)
16g
2 tbsp dry cocoa powder
30g
4 cup powdered sugar
640g

Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
2. Prepare the Batter:
In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy (about 3-5 minutes).
3. Add Wet Ingredients:
Beat in the vanilla extract and the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
4. Incorporate the Dry Ingredients:
Gradually add the self-raising flour to the mixture, beating on low speed until just combined. Do not overmix.
5. Create Zebra Effect:
Divide the batter evenly into two separate bowls. In one bowl, add the milk and mix to combine. In the other bowl, sift in the dry cocoa powder and mix until well incorporated.
6. Layer the Batter:
Spoon about 1 tablespoon of the plain (vanilla) batter into the bottom of each cupcake liner. Add a spoonful of chocolate batter on top of the vanilla batter. Continue to alternate between the vanilla and chocolate batters until the liners are about 3/4 full. Each layer should slightly spread out, creating a striped pattern like a zebra.
7. Bake:
Place the muffin tin in the oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
8. Cool:
Remove the cupcakes from the oven and allow them to cool in the pan for about 10 minutes. Then transfer the cupcakes to a wire rack to cool completely.
9. Make the Vanilla Frosting:
In a mixing bowl, beat the softened butter with the electric mixer until creamy. Gradually add the powdered sugar, 1 cup at a time, beating well after each addition. Once all the powdered sugar is incorporated, add 2 tsp of vanilla extract and beat the mixture until smooth and fluffy.
10. Frost the Cupcakes:
Once the cupcakes are completely cool, frost them with a generous amount of the vanilla frosting. Use a piping bag for a decorative finish or simply spread the frosting on with a spatula.
11. Serve and Enjoy:
Enjoy your beautifully striped Zebra Cupcakes! These can be enjoyed immediately or stored in an airtight container at room temperature for up to 2 days.

Tips:

- Ensure your butter is at room temperature for easier mixing and a smoother batter.

- When adding the batter to the cupcake liners, alternate between vanilla and chocolate to achieve the zebra stripe effect.

- Use a toothpick to create swirls if you want more intricate patterns.

- Do not overmix the batter, as it can lead to dense cupcakes.

- Use high-quality cocoa powder for the best chocolate flavor.

- Let the cupcakes cool completely before frosting to prevent the frosting from melting.

Enjoy the impressive zebra pattern and delicious taste of these unique cupcakes. They're sure to be a crowd-pleaser at any event. Remember to store any leftovers in an airtight container to keep them fresh. Happy baking!
