Beef and caramelised onion sausage rolls

Beef and caramelised onion sausage rolls are a tasty twist on the classic sausage roll recipe. With a flavorful filling of ground beef, caramelized onions, and fresh thyme encased in golden, flaky puff pastry, these rolls are perfect for a snack, party appetizer, or even a main meal.

Ingredients:

1 tbsp olive oil
14g
2 onions
320g
2 tsp brown sugar
6g
1 tbsp vinegar
16g
18 oz ground beef (80/20%)
510g
1 egg
50g
1/3 cup bread crumbs
30g
1 tbsp fresh thyme
16g
2 sheets puff pastry
500g
1/3 cup almonds
40g

Instructions:

1. Caramelize the Onions:
- Heat the olive oil in a large skillet over medium heat.
- Add the finely chopped onions and cook, stirring occasionally, for about 10-15 minutes until the onions are soft and golden brown.
- Add the brown sugar and vinegar to the onions, stir well, and cook for an additional 2-3 minutes until the onions are caramelized. Remove from heat and let cool.
2. Prepare the Filling:
- In a large mixing bowl, combine the ground beef, lightly beaten egg, bread crumbs, fresh thyme, finely chopped almonds, and the cooled caramelized onions. Mix thoroughly until all the ingredients are evenly incorporated.
3. Assemble the Sausage Rolls:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out one sheet of puff pastry on a lightly floured surface. Cut the pastry into two equal rectangles.
- Spoon half of the beef mixture down the center of each pastry rectangle, forming a long log shape.
- Fold one side of the pastry over the filling, then fold the other side over and press to seal the edges. You may need to use a little water to help seal the edges.
- Repeat the process with the other sheet of puff pastry and beef mixture.
4. Prepare for Baking:
- Place the assembled sausage rolls seam-side down on the prepared baking sheet.
- Use a sharp knife to make a few small slashes on the top of each roll to allow steam to escape.
- If desired, lightly brush the tops of the pastry with a little beaten egg or milk for a golden finish.
5. Bake and Serve:
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
- Remove from the oven and let cool on a wire rack for a few minutes before slicing into smaller pieces.
6. Enjoy:
- Serve the beef and caramelized onion sausage rolls warm as an appetizer, snack, or main course. They can be enjoyed with a side of salad, dipping sauce, or on their own.

Tips:

- Make sure to caramelize the onions slowly over low heat to bring out their natural sweetness.

- Use a high-quality puff pastry for the best results. If you have the time, homemade puff pastry can take these rolls to the next level.

- Allow the filling to cool slightly before assembling the rolls to prevent the pastry from becoming soggy.

- Brush the pastry with a beaten egg before baking to achieve a beautiful golden color.

- Feel free to customize the filling with other ingredients like cheese, herbs, or spices to suit your taste.

Enjoy these delicious beef and caramelised onion sausage rolls fresh out of the oven. The combination of savory beef, sweet caramelised onions, and crispy puff pastry is sure to be a hit with family and friends. Serve with your favorite dipping sauce for an extra burst of flavor!
