This dish combines the natural sweetness of baked sweet potatoes with the savory, creamy, and spicy elements of cheddar cheese, sour cream, and green chili. Instructions:

1. Preheat the Oven:
Preheat your oven to 400°F (200°C).
2. Prepare the Sweet Potatoes:
- Wash the sweet potatoes thoroughly under running water and pat them dry with a kitchen towel.
- Pierce each potato several times with a fork to allow steam to escape during baking.
- Rub each potato with 1 tablespoon of olive oil until they are evenly coated.
3. Bake the Sweet Potatoes:
- Place the sweet potatoes on a baking sheet.
- Bake in the preheated oven for about 45-60 minutes, until they are tender and easily pierced with a fork.
4. Prepare the Filling:
- While the potatoes are baking, finely chop the green onions and red hot chili pepper.
- In a small bowl, mix the chopped green onions and chili pepper with the shredded cheddar cheese. Set aside.
5. Prepare the Sour Cream:
- In another small bowl, stir the sour cream to soften its texture.
6. Stuff the Potatoes:
- Once the sweet potatoes are tender, remove them from the oven and let them cool for a few minutes until they are safe to handle.
- Carefully cut each potato in half lengthwise. Using a spoon, scoop out most of the flesh, leaving a thin layer to help maintain the structure of the skin.
- Place the scooped sweet potato flesh into a mixing bowl and mash it with a fork.
- Stir in the chopped green onions, red chili pepper, shredded cheddar cheese, and 1 tablespoon of olive oil. Mix well until all ingredients are evenly combined.
7. Re-stuff the Potatoes:
- Spoon the filling back into the sweet potato skins, dividing it evenly among them.
- Place the stuffed potatoes back on the baking sheet.
8. Bake the Stuffed Potatoes:
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, until the tops are golden brown and the cheese is melted and bubbly.
