Creamy mushroom soup is a delightful comfort dish that's perfect for chilly evenings. Ingredients:

Instructions:

1. Prepare the Ingredients:
- Peel and finely chop the onion.
- Mince the garlic cloves.
- Peel and dice the potatoes into small cubes.
- Slice the mushrooms.
- Finely chop the fresh thyme.
2. Sauté the Aromatics:
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
3. Cook the Vegetables:
- Add the diced potatoes and sliced mushrooms to the pot.
- Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to brown.
4. Add the Liquid:
- Pour in the 4 cups of chicken gravy.
- Stir to combine all the ingredients well.
5. Simmer:
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for about 20-25 minutes, or until the potatoes are fully cooked and tender.
6. Blend the Soup:
- Use an immersion blender to purée the soup until smooth. Alternatively, let the soup cool slightly and blend in batches in a countertop blender. Be careful when blending hot liquids, and ensure the blender lid is secure but has a gap for steam to escape.
7. Add the Cream:
- Stir in the 1/2 cup of light sour cream until fully incorporated.
- Add the chopped fresh thyme and stir to combine.
8. Season and Serve:
- Taste the soup and season with salt and pepper as needed.
- Ladle the creamy mushroom soup into bowls and serve hot.
