- Add the chopped onion to the pan. Sauté for about 3-4 minutes, or until the onion becomes soft and translucent.
4. Add Curry Powder:
- Stir in the 2 tablespoons of curry powder, mixing well with the onion.
5. Brown the Beef:
- Add the ground beef to the pan. Cook for 5-7 minutes, or until the beef is browned, breaking it up with a spatula as it cooks.
6. Add Tomatoes and Potatoes:
- Pour in the canned tomatoes with their juice.
- Add the diced potatoes to the pan. Stir to combine all the ingredients.
7. Simmer the Mixture:
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the pan and let it simmer for about 20-25 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally to prevent sticking.
8. Add Sour Cream and Scallions:
- Stir in the 1/2 cup of sour cream until well combined.
- Mix in the sliced scallions, saving some to garnish on top if desired.
