Ingredients:

2 tbsp vinegar
1 tbsp olive oil
1.50 tbsp sun-dried tomatoes
1/4 tsp black pepper
1 garlic clove
20 oz chicken breasts
1 cup cherry tomatoes
1/2 cup grated parmesan cheese
1 tbsp basil
6 pita breads
3 oz kale

Instructions:

1. Marinate the Chicken:
- In a small bowl, combine 2 tbsp of vinegar, 1 tbsp of olive oil, 1.5 tbsp of sun-dried tomatoes, 1/4 tsp of black pepper, and the minced garlic clove.
- Pour half of this mixture over the chicken breasts to marinate. Let them sit for at least 15 minutes, but preferably for 1 hour in the refrigerator.

3. Prepare the Cherry Tomatoes:
- While the chicken is cooking, halve the cherry tomatoes and set them aside.
4. Prepare the Pitas:
- Warm the pita breads either in the oven at 350°F (175°C) for about 5 minutes or in a microwave for about 30 seconds until they are soft and pliable.
5. Assemble the Pitas:
- Spread a layer of the remaining sun-dried tomato vinaigrette inside each pita.
- Layer each pita with a portion of kale, followed by grilled chicken strips, halved cherry tomatoes, and a sprinkle of grated Parmesan cheese.
- Top with chopped fresh basil.
6. Serve:
- Serve the assembled pitas immediately while the chicken is still warm.
