This recipe swaps out the traditional mashed potatoes for creamy, cheesy cauliflower mash, making it perfect for those following a keto or low-carb diet. Ingredients:

Instructions:

1. Cook the Cauliflower:
- In a large pot, bring water to a boil. Add the cauliflower florets and cook until they are tender, approximately 10-15 minutes.
- Drain the cauliflower well and let it sit for a few minutes to ensure most of the moisture evaporates.
2. Mash the Cauliflower:
- In a large bowl or food processor, add the cooked cauliflower, cream cheese, and the chicken broth cube (4g).
- Mash or blend until smooth and creamy. This will be your mashed cauliflower topping.
3. Cook the Ground Beef:
- In a large skillet over medium-high heat, add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add the finely chopped onion to the ground beef and cook until the onion is translucent.
4. Season the Meat:
- Crumble the 1 tbsp of chicken broth cubes (6g) over the meat mixture and stir well to combine.
- Continue to cook for another 2-3 minutes to ensure the flavors meld together.
5. Add the Cauliflower Topping:
- Spoon the mashed cauliflower on top of the meat layer and spread it out evenly.
6. Add Cheese:
- Sprinkle 2 cups (230g) of cheddar cheese over the cauliflower layer.
- Add another 2 cups (230g) of cheddar cheese on top for an extra cheesy finish.
7. Serve:
- Remove from the oven and let it sit for a few minutes before serving.
