1. In a medium saucepan, combine the bloomed gelatin, sugar, and lime juice.
2. Heat the mixture over medium heat, stirring constantly, until the gelatin and sugar are completely dissolved. Be careful not to let it boil. This should take about 2-3 minutes.
3. Blend the Mango:
1. While the gelatin mixture is heating, place the chopped mangoes in a blender. Blend until smooth to make a mango puree.

4. Combine Ingredients:
1. Once the gelatin mixture is ready, remove it from the heat.
2. Add the mango puree to the saucepan, stirring well to ensure it is fully combined.
3. For added creaminess, gently stir in the coconut milk or whole milk at this stage (optional).
5. Set the Pudding:
1. Pour the mango mixture into serving bowls or molds.
2. Let the pudding cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
6. Serve:
1. Once set, you can optionally garnish with extra chopped mango, a dollop of whipped cream, or a sprinkle of lime zest.
