- In a small bowl, combine the 2 tablespoons of olive oil and 2 tablespoons of vinegar. Whisk them together until well mixed. Set aside.
2. Prepare the Ingredients:
- Slice the tomato into uniform, thin rounds.
- Cut the low moisture mozzarella cheese into slices that are approximately the same thickness as the tomato slices.
- Wash and pat dry the basil leaves.
3. Assemble the Sandwiches:
- Lay out the 4 slices of baguette on a clean surface. If the baguette slices are too large, you may wish to cut each one in half for a smaller sandwich.
- Drizzle a bit of the olive oil vinaigrette over the top of each slice of baguette.
- Place one or two slices of tomato on each piece of baguette.
- Add one or two slices of mozzarella cheese on top of the tomato.
- Place a fresh basil leaf on top of the mozzarella.

- Top each sandwich with a second slice of baguette to complete the sandwich.
