3. Prepare the egg mixture:
- In a large mixing bowl, crack open the 8 eggs.
- Whisk the eggs until the yolks and whites are fully combined.
- Add the finely chopped onion, dried oregano, salt, and black pepper to the eggs and mix well.
4. Assemble the egg bake:
- Spread the cooked spinach evenly across the bottom of the greased baking dish.
- Sprinkle 1 cup of the shredded mozzarella cheese over the spinach.
- Pour the egg mixture evenly over the spinach and cheese.
- Sprinkle the remaining 0.5 cup of shredded mozzarella cheese on top.
