This Spinach and Mozzarella Egg Bake is a simple, wholesome dish that's perfect for breakfast, brunch, or even a light dinner. Filled with nutritious spinach and gooey mozzarella, it's a satisfying meal that's both healthy and delicious. Made with minimal ingredients, this egg bake is easy to prepare and packed with flavor.

Ingredients:

1 tsp olive oil
4.50g
1/2 package spinach
140g
1.50 cups mozzarella cheese
170g
1/3 cup onion
33g
8 eggs
450g
1 tsp dried oregano
1.80g
1 dash salt
0.40g
1 dash black pepper
1/10g

Instructions:

1. Prepare the oven and baking dish:
- Preheat your oven to 375°F (190°C).
- Lightly grease an 8x8-inch baking dish with a small amount of olive oil to prevent sticking.
2. Cook the spinach:
- Heat 1 tsp of olive oil in a large skillet over medium heat.
- Add the spinach to the skillet and cook, stirring occasionally, until the spinach is wilted, about 3-4 minutes.
- Once cooked, remove the spinach from the skillet and set it aside. Allow it to cool slightly, then squeeze out any excess moisture.
3. Prepare the egg mixture:
- In a large mixing bowl, crack open the 8 eggs.
- Whisk the eggs until the yolks and whites are fully combined.
- Add the finely chopped onion, dried oregano, salt, and black pepper to the eggs and mix well.
4. Assemble the egg bake:
- Spread the cooked spinach evenly across the bottom of the greased baking dish.
- Sprinkle 1 cup of the shredded mozzarella cheese over the spinach.
- Pour the egg mixture evenly over the spinach and cheese.
- Sprinkle the remaining 0.5 cup of shredded mozzarella cheese on top.
5. Bake:
- Place the baking dish in the preheated oven.
- Bake for 25-30 minutes, or until the egg bake is set and the top is golden brown.
- To check for doneness, insert a toothpick into the center of the bake. If it comes out clean, the egg bake is ready.
6. Serve:
- Remove the egg bake from the oven and let it cool for a few minutes before slicing.
- Cut into squares and serve warm.

Tips:

- Preheat your oven to 375°F (190°C) before you start preparing the ingredients to save time.

- Ensure the spinach is thoroughly washed and dried to avoid excess moisture in the dish.

- For a fluffier texture, whisk the eggs thoroughly until you see bubbles forming on the surface.

- Feel free to add extra vegetables like bell peppers, mushrooms, or tomatoes for additional flavor and nutrition.

- Grease your baking dish well with olive oil to prevent sticking and make cleanup easier.

- Allow the egg bake to cool for a few minutes before cutting to help it set and make it easier to slice.

With just a handful of ingredients, this Spinach and Mozzarella Egg Bake delivers a nutrient-packed, flavorful dish that's sure to become a staple in your meal rotation. It's versatile, healthy, and delicious—perfect for feeding a crowd or for meal prep. Enjoy the cheesy, savory goodness of this easy-to-make bake!
