Instructions:

1. Prepare the Pita Bread:
- Preheat your oven to 375°F (190°C).
- Cut the pita bread into bite-sized pieces.
- Place the pita pieces on a baking sheet and drizzle with 2 tablespoons of olive oil.
- Toss to coat the pita evenly with the oil, and sprinkle with a little salt.
- Bake in the preheated oven for about 8-10 minutes, or until golden and crisp. Remove and let them cool.
2. Chop the Vegetables:
- While the pita is baking, dice the tomatoes into medium-sized chunks.
- Peel and thinly slice the shallots.
- Pit the olives if necessary and cut them in half.
- Mince the garlic cloves.
3. Make the Dressing:
- In a small bowl, combine the remaining olive oil, vinegar, minced garlic, and dried oregano.
- Whisk the mixture until well blended.
- Season with salt and pepper to taste.
4. Mix the Salad:
- In a large salad bowl, combine the diced tomatoes, sliced shallots, and halved olives.
- Crumble the feta cheese over the vegetables.
