Ingredients:

Instructions:

- Once cooled, roughly chop the pistachios.
2. Prepare the Carrots:
- Peel and julienne (or grate) 4 cups of carrots. Set aside.
3. Make the Dressing:
- In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of honey, and 1 teaspoon of ground cinnamon until well combined.
